The time is coming when caramel is increasingly used in desserts. Or caramel takes a starring role in your next dessert. Making caramel sauce usually requires quite a bit more pastry skills. It usually serves up a rich flavour, and its versatility is demonstrated through the variety of uses it can be put to in recipes.
It can be used as a cake filling, poured over ice cream, made into brownies or served in chocolate and caramel pies.
Here is a recipe for how to make a delicious and rich caramel sauce.
To make the caramel sauce, you need 200 g of sugar, 6 tablespoons of good quality butter, 120 ml of sweet cream and a pinch of salt.
Heat the sugar in a heavy-bottomed saucepan over a medium-low heat. Stir until the sugar is completely melted. The sugar will start to form lumps and then slowly melt. Be patient and make sure it does not burn.
Once the sugar has melted, immediately remove it from the heat and stir in the butter. Then pour in the cream and a pinch of salt. Stir until all the ingredients are combined. Spoon over the cooled caramel.
Add the remaining salt if desired. Pour into a small bowl and leave to cool completely before using.
