1. Tips for making caramel sauce

  • Use high-quality butter: The quality of the butter in caramel really makes a difference to the texture of the caramel sauce.
  • Never leave caramel sauce unattended: Making caramel sauce is essentially roasting white sugar. Once melted, add butter, cream and salt. Sugar can quickly turn from burnt to burnt, so make sure you keep the roasting under control.
  • Don''t forget the salt! Without it, the caramel is simply too sweet. A healthy amount of salt really deepens the flavour and prevents the caramel from being too sweet.


2. How do you make caramel sauce?


To make the caramel sauce, you need 200 g of sugar, 6 tablespoons of good quality butter, 120 ml of sweet cream and a pinch of salt.

Heat the sugar in a heavy-bottomed saucepan over a medium-low heat. Stir until the sugar is completely melted. The sugar will start to form lumps and then slowly melt. Be patient and make sure it does not burn.

Once the sugar has melted, immediately remove it from the heat and stir in the butter. Then pour in the cream and a pinch of salt. Stir until all the ingredients are combined. Spoon over the cooled caramel.

Add the remaining salt if desired. Pour into a small bowl and leave to cool completely before using.
