Recipe for chocolate muffins

Instructions


1. In a large bowl, combine the flour, brown sugar, cocoa powder, baking powder, baking soda and salt. Stir well to evenly distribute the ingredients.


2. In another bowl, whisk together the buttermilk (235 ml milk + 1 tbsp vinegar), eggs, oil and BAM vanilla paste. Stir until the mixture is smooth.


3. Gradually add the wet mixture to the dry mixture and stir gently until the ingredients are combined. Then add the melted dark chocolate and stir gently until fully combined.


4. Place the prepared mixture in the fridge for at least 20 minutes to thicken slightly.


5. Preheat the oven to 200°C and prepare a muffin tray lined with paper cases.

Divide the batter evenly between the muffin cases, filling them about 3/4 full. Sprinkle a few dark chocolate pieces on top of each muffin.


Bake for 8 minutes at high temperature, then reduce the temperature to 150°C and bake for a further 10 minutes, or until a toothpick inserted in the centre of the muffin comes out with a few moist crumbs.


6. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.


Chocolate ganache preparation:


1. In a small saucepan, heat the sweet cream over a medium heat until it begins to simmer gently. Make sure it does not boil.


2. Finely chop the dark chocolate and place in a heatproof bowl. Pour the hot cream over the chocolate and leave to stand for 2-3 minutes to melt the chocolate.


3. Gently stir the mixture until the chocolate is completely melted and the ganache is smooth. Allow to cool to room temperature until thickened but still runny.


Filling the muffins with ganache:


1. When the muffins have cooled completely, use a small knife or chopstick to make a hole in the centre of each muffin.


2. Fill a piping bag with ganache and pipe it into the centre of each muffin. Allow the ganache to set before serving.
