Why is Ruby chocolate pink?

All of us chocolate lovers pricked up our ears last September like we hadn''t done in a long time. The biggest chocolate manufacturer in the world, Barry Callebaut, presented to the public a brand new chocolate that is not only a remarkable discovery in terms of taste, but also in terms of colour. Believe it or not, Ruby pink chocolate does not contain artificial colours or berries, as some people believe. Its beautiful pink colour comes from a special variety of cocoa beans grown in Ecuador, Brazil and the Ivory Coast, which contain a pink pigment.

Its discovery is the result of years of research

After 13 years of trials, Ruby chocolate was launched in Shanghai last September. It was introduced to the world by Swiss giant Nestlé for the first time in 80 years since the discovery of white chocolate. The latter is actually a derivative, as it does not contain cocoa mass, and is therefore not chocolate in the true sense of the word , according to experts . Unlike white chocolate, Ruby is considered by experts to be a true chocolate and not a derivative.

What about the taste?

Not only does Ruby pink chocolate look completely different from all other types of chocolate known to date - it also tastes completely different. According to those lucky enough to have had the chance to try it, it has a very special taste - not bitter, not milky, not sweet, but rather a slightly creamy and fruity and sour berry flavour intertwined . It is not as sweet as milk chocolate, but it is also not as tart as, for example, dark chocolate.

Pink hot chocolate

You read that right, Ruby chocolate was also used to make hot chocolate in Japan around Valentine''s Day this February . It was made from a mixture of Ruby chocolate and raspberry puree, giving the drink a sour-sweet fruity taste. Chocoholics who had the chance to try it were definitely in for a treat , as the hot chocolate was accompanied by a special Kit Kat Ruby chocolate bar, which enhanced the flavour of this hot treat. What makes this hot chocolate different from regular hot chocolate is that the regular chocolate flavour is enhanced by a mild, creamy strawberry flavour.

Good news for chocolate lovers in Europe

So far the chocolate has been available in Japan and South Korea, but the manufacturers promise that it will soon be available worldwide. This April will be a milestone for those who have been waiting for Ruby chocolate. They will start producing it in Belgium! It is not called the chocolate capital for nothing; Belgium is said to be the first country to have exported more chocolate than it importedin the last century .

Which is hardly surprising; who could resist the delicious Belgian pralines and other chocolate delicacies? Just a few months after the discovery of this pink miracle , Belgian chefs will have the chance to try it out.
