An old classic in a slightly different form, suitable for sweetening all year round. The cake consists of a light and juicy carrot sponge with orange, topped with orange-cinnamon jelly and a divine mousse with cream cheese, to which BAM vanilla paste is added for a fuller flavour. Special attention is paid to the sponge cake, as it plays a really important role in the cake''s flavours and texture.

Chocolate lights with salted caramel and peanuts

They taste like the famous Snickers chocolates. They consist of milk and white chocolate mousse, salted caramel filling with peanuts and a crunchy milk chocolate coating. For the filling we will use BAM salted caramel topping, which has a pleasant salty taste and creamy texture, and goes perfectly with chocolate and of course - peanuts.

Eclair with vanilla cream and caramel

Vanilla and caramel are a pair that never disappoints and satisfy almost all gourmets. But don''t let the word caramel scare you away, because it''s never been easier - this recipe uses BAM Toffee Caramel Topping, which tastes insanely good, has a great texture and saves us the work and time it would take to make caramel. Hooray!

Chocolate slices with coffee and walnuts

Coffee and walnut slices are a real treat. They consist of a cocoa sponge, white chocolate cream with coffee, a light white sponge with walnuts, dark chocolate cream and a chocolate glaze with walnuts to give them a little extra crunch. The cooling time of the individual components during assembly is shortened by using a freezer, and the partially frozen slices will stabilise the glaze quickly and allow for nicer and cleaner cuts.The recipe for the coffee and walnut slices is the subject of the third BAM recipe book - Modern Desserts.

Sweet and crunchy, the balls made from puff pastry are as good as they look. I love princess balls because you can create so many different flavours with them.Because of their texture, you can also choose softer fillings as there is no fear of spillage or spilling. The hazelnut princesses consist of chocolate-hazelnut cream and hazelnut praline, surrounded by a crust of crumbly sweet pastry with hazelnuts added.

Hazelnut pies with vanilla mousse

The pitas blend different flavours and textures to create one divine whole. They consist of hazelnut shortcrust pastry, hazelnut praline, chocolate-hazelnut cream and a light vanilla mousse dressed in a crunchy chocolate crust. Divide the preparation of the pitas over two days so that the fragile dough has plenty of time to rest.

Eclairs are one of those desserts that make most people''s hair curl. True, they are difficult to prepare and require a little more experience and skill, but they are definitely worth the effort. The biggest difficulty lies in the preparation of the pastry, as it takes practice to get a feel for the appropriate density of the mixture.
