Ingredients:

  • 120 g all-purpose flour
  • 2 tablespoons crystal sugar
  • 1 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 245 g Greek or plain yoghurt
  • 2 large eggs
  • 2 tablespoons melted unsalted butter or vegetable oil
  • 80 ml milk (optional)

Instructions:

Heat a large frying pan over medium-high heat. Turn or swirl regularly to heat evenly. When the pan is hot, reduce the heat and maintain the surface hot.

Prepare the dough. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda and salt. In another medium bowl, whisk the yoghurt and eggs. Add the yogurt and egg mixture to the flour mixture and stir. Stir in the melted butter or oil. If the batter is too thick (which may happen depending on the consistency of the yoghurt used), slowly add another 80 ml of milk.

Add the oil to the pan. Using a spoon, form an even dough and fry until bubbles form on the surface, about 2 minutes. Using a spatula, turn them over and fry until golden brown on the other side - this takes about 2 minutes more. Transfer the pancakes to a plate or individual plates. Serve the pancakes hot and, if desired, add butter, maple syrup, honey or jam.
