INGREDIENTS: - 3 eggs - 3 tablespoons almond flour - 1 tbsp BAM Natural Sweetener - BAM Apricot jam without added sugar - 1,5 dl whipping cream - Salt PROCESS: 1. Combine the egg yolks and BAM Natural Sweetener in a bowl, whisk until foamy. 2. In another bowl, whisk the egg whites with a pinch of salt until stiff. 3. Gradually add the almond flour to the egg yolks and mix well. 4. Gently fold the whisked egg whites into the egg yolk mixture to keep the mixture airy. 5. Pour the mixture into a baking tray lined with baking paper and bake in a preheated oven at 180 °C for 10-15 minutes. 6. Remove the omelette from the oven, remove the baking paper and brush with BAM apricot jam while still warm. 7. Add the whipped cream to half of the omelette and fold the omelette over.
