1. Step Bring the sugar, water and condensed milk almost to the boil.
2. Step Add the pre-soaked gelatine and mix.
3. Step Add the white chocolate. Stir again and strain.
4. Step Cool the icing to about 32°C and pour it over the well-chilled cake. The melted white chocolate may be slightly yellowish in colour. If you want the white chocolate topping to be really white, say snow white, you can add white colour during the process.
