First, preheat the oven to 180°C. Grease three 22 cm diameter cake tins well with butter and line the base with baking paper.In a large bowl, mix the sugar and oil, then gradually add the eggs and stir until well combined.In another bowl, whisk together the flour, baking powder, baking soda, salt and cinnamon. Sift the dry ingredients into the sugar/oil mixture and stir slowly until evenly combined.Once the dry ingredients are fully incorporated, add the grated carrots and orange zest. Stir carefully with a spatula to distribute everything well.

Divide the dough evenly between the prepared cases and place them in the preheated oven. Bake for about 45 minutes. When the cakes are baked, remove them from the oven and leave them to cool completely.

Meanwhile, prepare the cream by mixing the cream cheese, icing sugar, vanilla sugar and freshly squeezed orange juice in a bowl. Stir until the mixture is smooth and creamy.Cover the cooled first layer of cake with a thick layer of cream, then place the second layer of cake on top and repeat the process. Spread the remaining cream over the sides of the cake and spread evenly.Sprinkle chopped walnuts over the top of the cake for a final decorative look.
