For the sponge, mix the egg yolks and egg whites separately. Add the remaining ingredients to the yolks and mix well. Then gradually add the egg whites and bake at 200 ºC for approximately 15-20 minutes.

While the sponge cake is baking, prepare the strawberry cream by melting 100 g of chocolate in a pan and stirring it into 150 ml of cream while it is cooling. Make the strawberry cream with about 200 ml of cream to which a little strawberry syrup has been added. Slice the strawberries thinly. For the coating, melt the rest of the chocolate and add the rest of the cream while it is melting. Then make the chocolate cream. Beat the butter on medium speed until light and foamy, about 2-3 minutes. Gradually add the icing sugar and beat until the mixture is smooth, about 3-4 minutes. Stir in the vanilla. Melt the BAM dark chocolate and add the prepared mixture to the cooled melted chocolate. Whisk on medium speed until the frosting is smooth and creamy.

When the sponge cake is baked and cooled, cut it in half and first brush both halves with chocolate mousse. Continue with the chocolate cream - place the fresh strawberries on top and then the strawberry cream. Cover with the other half of the sponge cake.

Finally, top with chocolate and decorate (if desired).
