BAM Sift the cocoa powder and caster sugar. This is a very important step, so don''t skip it.

Using a mixer fitted with the whisk attachment, whip the mascarpone cheese, BAM cocoa powder and icing sugar at medium speed. Whisk until all the ingredients are combined.

Add the cream and gradually increase the speed, whisking at maximum speed. Whisk until you reach the desired consistency for a chocolate cream that will hold its shape well. Whisk the mixture until stiff peaks form - whisk until the peaks look firm, being careful not to whisk too much at this point, as the cream will have a grainy texture or will eventually turn into butter. Eat it as a dessert on its own or use a piping bag to spread it on the dessert as a decoration .
