Melt the butter in a small saucepan and pour it into a large bowl. Add the brown and crystal sugar and stir on low speed until the mixture is completely smooth. In a smaller bowl, whisk together the egg and vanilla sugar and add to the butter/sugar mixture. Mix on medium speed until all the ingredients are well combined.

Add the baking powder and salt to the resulting mixture, then carefully fold in the flour with a spatula, mixing until the dough is smooth. Finally, add the chocolate drops of your choice.

Spread baking paper on a baking tray and shape the biscuits about 5 cm apart with a spoon (or even better, ice cream tongs if you have them at home), as they will rise during baking. Cover them with clear plastic wrap and place the baking tray in the fridge for at least 2 hours to chill the dough.

When the dough has cooled completely, take it out of the fridge and bake the biscuits at 180 °C for 10-15 minutes. You will be able to tell if the chocolate cuckoos are fully baked by their beautiful golden colour. Take them out of the oven and leave them to cool slightly for 20 minutes before you can start the much-awaited sweetening. And have a great run!
