Using a special spoon, make 12 balls of the same size. Place them on a tray of suitable size lined with baking paper and place in the freezer for 1 hour.

Break the chocolate into pieces and place in a bowl. In a suitably large bowl, heat the cream and sugar together and whisk to melt the sugar. Pour the hot cream over the chocolate and allow it to melt.

Slowly stir the cream until it becomes uniform and smooth. Refrigerate for about one hour, stirring well every ten minutes.

Put the cocoa in a small bowl. Gradually remove the ice cream balls from the freezer and dip each one on all sides in the chocolate cream and roll in the cocoa. Place the balls immediately back in the freezer to harden the crust.

If the cream is warm, it will melt the ice cream, but if it is too cold, it will not stick well to the balls.

The chocolate-crusted ice cream balls can be stored in a plastic bag in the freezer for up to one month.
