Chocolate muffins can be the perfect declaration of love. They have a strawberry filling, BAM chocolate hazelnut spread and BAM vanilla paste to match the flavors.

The chocolate muffins can also be called vanilla muffins. The secret lies in the dough, which combines a fluffy interior and an unforgettable, buttery vanilla flavor. To make the chocolate muffin batter really fluffy, we use only the egg whites, not the yolks. To make the batter more moist, we add some sour cream. If the recipe calls for both, the chocolate muffin batter will surely be a success.

For the Valentine's Day version of chocolate muffins, we added a strawberry filling and a chocolate hazelnut spread filling. Both this filling and the strawberry filling are made with buttercream. To make the preparation easier, we use the same buttercream for both versions of the filling. For this we will simply divide it into two varieties.

BAM tip: Fill the muffin cups only about 2/3 full. Since the chocolate muffins will continue to rise as they bake, they will not rise above the mold prepared this way.

1. Step Preheat the oven to 180 °C. Fill a 12 muffin tray with paper cups. The recipe is enough for 14-15 muffins, so you should prepare a second muffin tray accordingly right away. Mix flour, baking powder, baking soda and salt in a bowl.
2. Step Next, beat the butter and sugar. Whisk for about 2 minutes until the mixture is uniform and creamy. Separately, beat the egg whites on high speed until stiff. Stir in the sour cream and BAM vanilla paste. Now gradually add the dry ingredients and whisk again until combined. Now you can slowly add the milk and continue whisking until combined with the other ingredients.
3. Step Spoon the finished batter into the prepared muffin tins. Fill them only 2/3 full, please. Bake for 20-22 minutes or until a toothpick inserted in the centre comes out clean. Let cool completely after baking.
1. Step Once the chocolate muffins have cooled, use a sharp knife to cut a circle/hole in their center, creating a small hole about 1 cm deep. The piece removed should therefore be cone-shaped. Put a spoonful of BAM Chocolate Hazelnut Spread into each muffin. You can use as much as you like. Cut off the pointed end of the removed "cone" sponge so that it fits over the filling. This way it becomes like a lid on the hole with the filling.
1. Step Crush the freeze-dried strawberries into a powder. Beat the butter with a hand or stand mixer on medium speed until creamy, about 2 minutes. Add the whipping cream, BAM vanilla paste and salt. Now whisk on low speed for about 30 seconds, then increase the speed and beat for another 3 minutes. Divide the buttercream in half. Whip one half of the buttercream with BAM Chocolate Hazelnut Spread and the other half with freeze-dried strawberry powder. If the filling is too thin for the piping bag, you can thicken it with an additional tablespoon of powdered sugar. If it is too thick, you can fix it with an additional spoon of whipped cream.
1. Step Fill the dressing bag fitted with the hose tip. Fill the piping bag alternately with one spoonful of chocolate filling and one spoonful of strawberry filling. Do this until the bag is full. Now spread this filling on the chocolate muffins. Finally, you just need to add a pretty decoration and surprise your loved ones.
