There's nothing better than simple Christmas sugar cookies. They are easy to prepare as you need less than 10 ingredients, all of which are well known and surely always stocked in the kitchen cupboard at home.

The cookies from this recipe will be soft but slightly crispy. They will retain the shape of the chosen cookie cutter when baked and have a nice flat surface for decorating. It is the simple ingredients that make this recipe easy and accessible to everyone.

BAM tip: We recommend using eggs at room temperature. These mix more easily and quickly with the cookie dough. An additional tip: If room temperature butter is called for in a recipe, room temperature eggs should also be used.

Ingredients:

  • 170 g unsalted butter, room temperature
  • 150 g sugar
  • 1 large egg, room temperature
  • 2 teaspoons BAM vanilla paste
  • 50 g BAM almond flour
  • 230 g all-purpose flour
  • 1/2 teaspoon baking powder
  • a pinch of salt

Instructions:

1. Step In a large bowl, beat the butter with a hand or stand mixer until creamy and smooth, about 1 minute. Add the sugar and beat at high speed until the mixture is light and fluffy, about 3 to 4 minutes. If necessary, scrape the batter from the sides and bottom of the bowl. Add the egg and BAM vanilla paste and mix until combined, about 2 minutes. If necessary, scrape the dough from the sides and bottom of the bowl.
2. Step In a medium bowl, whisk together the BAM almond flour, all-purpose flour, baking powder and salt. Gradually add the flour: add about half of the flour mixture and mix on low speed. Add the remaining flour and continue mixing until the ingredients are combined. If the dough is still too soft, you can add 1 tablespoon of flour to achieve a better rolling consistency.
3. Step Divide the prepared dough into two equal-sized balls. Roll out each ball on a piece of baking paper about 0.5 cm thick. Place both pieces of dough on a baking sheet, cover lightly and chill for at least 1 to 2 hours. The dough must be chilled.
1. Step When the dough has cooled down, preheat the oven to 180 °C. Now line 2 to 3 large baking trays with baking paper or silicone baking mats. The amount of cookies depends on how big/small you want the cookies to be. Cut out the first part of the dough from the refrigerator with a cookie cutter. Place the cut cookie dough on a prepared baking sheet. Keep rolling out the remaining dough and cutting until it is all used up. Bake the cookies for 10 to 12 minutes, until golden brown on top and around the edges. Let the cookies cool on the baking tray for about 5 minutes, then transfer to a wire rack to cool completely. Decorate as desired.
