Ingredients:

  • 225 g unsalted butter, room temperature
  • 200 g brown sugar
  • 2 teaspoons BAM vanilla paste
  • 2 eggs
  • 315 g flour
  • 2 teaspoons baking powder
  • a pinch of salt
  • 1 teaspoon ground cinnamon
  • 3 tablespoons melted unsalted butter
  • 100 g brown sugar
  • 1 teaspoon ground cinnamon

Instructions:

Beat the softened butter and sugar on medium to high speed until the mixture is light and fluffy, about 3 minutes. Then add the eggs and BAM vanilla paste. Beat until the ingredients are fully combined. Add the flour, baking powder, cinnamon and salt. Mix until no traces of flour remain in the mixture. Shape the biscuit dough into a flat rectangle and wrap it in plastic wrap. Refrigerate for 30 minutes. Flour a work surface generously and roll out the biscuit dough into a rectangle.

In a small bowl, mix together the melted butter, brown sugar and cinnamon for the filling. Stir until the mixture resembles wet sand. Spread the mixture in an even layer on the dough, all the way to the edges of the dough. Roll the long side into a tight log, sealing the edge of the cookie dough log. Wrap in plastic wrap and place in the freezer for 10 minutes to firm up a little. While the dough is setting, preheat the oven to 180°C and line a baking tray with baking paper. When the dough is firm enough to handle, cut the cinnamon roll. Using a sharp knife, cut biscuits about 1 cm thick and place them on the baking tray.

Bake for 10 minutes or until the edges are golden brown and the centres are slightly puffed. Transfer to a wire rack to cool. While the biscuits are cooling, make the icing. Place the cream cheese in the microwave for 15 seconds or until melted. Add the remaining icing ingredients and mix. Pour the glaze over the biscuits and enjoy!
