Break the chocolate into small pieces and melt it over a water bath. Add 2 teaspoons of sugar and 3 tablespoons of Maraschino to the melted chocolate.

Stir until the sugar is completely dissolved. Whisk the egg yolks and gradually fold them into the chocolate mixture, then cool.

Meanwhile, add the rest of the sugar to the whisked egg whites and gradually fold the stiff peaks into the chocolate mixture.

Pour the chocolate batter into the greased moulds and place them on a baking tray. Place the baking tray in an oven preheated to 230 degrees for 12 to 15 minutes.

Sprinkle the chocolate spread with icing sugar and serve while still warm.
