In a small bowl, mix the gelatine with 50 ml of coconut milk and leave the gelatine to swell - about 5 minutes. Meanwhile, heat the remaining coconut milk, cream and sweetener in a medium-sized saucepan. Stir the mixture over a medium-low heat until the sweetener is completely dissolved and the mixture starts to heat almost to boiling.

When the mixture is heated, carefully add the swollen gelatine to the pan. Stir until the gelatine is completely dissolved and incorporated into the coconut mixture. Add the BAM vanilla paste and a pinch of salt. The vanilla will add a pleasant aroma and the salt will bring out the sweetness and flavour of the coconut.

Carefully pour the coconut mixture into the prepared cups. Place the cups in the fridge and leave the panna cotta to set. This process takes at least 4 hours, but it is best to leave the panna cotta in the fridge overnight to allow it to cool and set completely.Top the prepared coconut panna cotta with the BAM coconut waffle topping.
