In a large bowl, whisk the eggs and combine them with the milk, flour, a pinch of salt, sweetener and oil to form a smooth and homogeneous dough without lumps.

In a separate bowl, prepare the curd filling by mixing the curd with the BAM vanilla sugar with real vanilla and freshly grated lemon zest to make a creamy mixture.

Heat a frying pan over medium-high heat and lightly grease it with oil or butter to prevent sticking.

Cook thin pancakes on a heated griddle, making sure they are evenly browned on both sides.

When the pancakes are cooked, spread a spoonful of the cottage cheese filling on each pancake, then carefully roll or fold them.
