The coconut balls recipe below is more than suitable for those who want to create a quick sweet snack without having to turn on the oven. These very tasty snow-white balls will take no more than 10 minutes to prepare. As they are dairy-free, they can also be eaten by vegans and are suitable for those who are gluten-sensitive. What''s more, even those who avoid large amounts of sugar can enjoy them without guilt.

There is no end in sight to the benefits of this recipe, which consists of just 4 useful ingredients:

  • Grated desiccated coconut (3 cups)
    Coconut is rich in fibre, so it has a beneficial effect on our metabolism, but it also has antioxidant properties, so it reduces the chances of heart attack and heart disease. It also helps to improve bone density, skin and hair.
  • Coconut flour (1 cup)
    Coconut flour is high in fibre, which helps improve metabolism and creates a fuller feeling, so you can eat less and still feel full. In addition, this flour is suitable for those who avoid gluten and therefore does not cause digestive problems or allergies.
  • Coconut water (5 teaspoons)
    Coconut water is very popular with athletes as a natural source of energy, but it is also more than welcome in the kitchen. It is very refreshing, especially in the summer months, and helps to lower blood pressure, bad cholesterol, reduce stress and muscle tension, and helps to cleanse and detoxify the body.
  • Agave syrup(1/3 cup)
    Agave syrup is a good sugar substitute as it has a low glycaemic index. However, as it is sweeter than regular sugar, it can be used in much smaller quantities. Diabetics should be especially careful when using it, as it raises blood sugar gradually.

Ingredients:

  • 3 cups grated desiccated coconut
  • 1 cup coconut flour
  • 5 teaspoons coconut water
  • 1/3 cup agave syrup

Instructions:

Cover the tray with baking paper to prevent the balls from sticking to the surface.

Blend all the ingredients in a blender for about 2 minutes to form a crumbly dough that you can use your hands to shape into coconut balls. If you find the dough too dry, add a teaspoon of coconut water.

When the dough is the right texture, empty the blender and gently form balls with your fingers and spread them on the tray. The quantity of dough is enough for 20-30 balls.

If you like, you can also decorate the coconut balls with chocolate - we particularly recommend dark chocolate with as high a cocoa content as possible from our wide range. If you want to avoid extra sugar, choose sugar-free chocolate or chocolate with as little sugar as possible. Chocolate drops can be particularly helpful for decoration, as they melt more easily and retain their rich flavour.

Melt 1/3 cup chocolate drops in a small saucepan. Carefully and slowly drizzle the melted chocolate over the coconut balls, or simply roll them in the chocolate.

Place the balls in the fridge for at least 1 hour before eating to set well. Of course, you can eat them earlier, but they are much tastier in solid form.
