Ingredients:
- 225 g flour
- 1 baking powder
- 110 g sugar
- 1 teaspoon vanilla paste
- 25 g BAM cocoa powder
- 200 g BAM dark chocolate
- 2 eggs
- 175 ml of milk
- 75 ml of oil
- Goji berries, blueberries
- Powdered sugar
- Chocolate crispy
Instructions:
1
First, mix the dry ingredients: sift the flour with the baking powder, add the sugar and cocoa. Mix the wet ingredients separately: beat the egg yolks and egg whites separately. Add the milk, vanilla paste, oil and fruit to the egg yolks. Finally, add the egg whites.
2
Quickly mix the two prepared mixtures together. Fill the muffin tins halfway with the batter. Insert the chocolate pieces into the batter and cover with a little more batter. Make sure to fill the moulds 2/3 full, as the muffins will rise during baking. Chocolate pieces can also be placed on top of the dough.
3
Bake in a preheated oven at 180 degrees for about 20-25 minutes on a medium rack. Remove the muffins from the moulds while they are still hot and cool slightly.
4
Sprinkle with powdered sugar and serve. They can also be decorated with chocolate mousse or chocolate crispy.
