1. How to prepare the egg-free princess cream?

We usually fill the princess cupcakes with vanilla custard, but the list of ingredients includes eggs. The yolks create the creamy texture, but this can also be achieved without the use of eggs, thus satisfying the taste buds of those who, due to health or other restrictions, are not allowed to consume eggs.

Cornstarch is a common ingredient in many recipes as it acts as a thickener without altering the original taste. 

The custard can then be topped with different flavours such as cocoa powder or fruit puree, and can be used to make other desserts such as ice cream, mousse or pudding, in addition to the princess filling.

In a medium bowl, whisk the milk, sugar, cornstarch and salt until well combined. Place the pan over a medium heat and whisk constantly until the mixture comes to the boil. Reduce the heat and whisk for a further 2 to 3 minutes or until the mixture thickens. Remove the pan from the heat and stir in the BAM vanilla paste.

Pour the vanilla cream into a bowl and cover with plastic wrap, making sure the plastic wrap is touching the surface of the cream to avoid a crust.

Chill the vanilla cream in the fridge for at least 1 hour or until completely chilled and set. Serve the vanilla custard chilled or use it as a filling for princess cookies or as a topping for cakes, pastries or other desserts.
