Melt the chocolate in a water bath, stirring occasionally until the chocolate is completely melted and smooth. Remove the bowl from the heat and leave to cool for a minute.

Add the freeze-dried strawberries to the melted chocolate and stir until the strawberries are completely coated with chocolate. Remove the strawberries from the chocolate with a fork and place them on a baking sheet.
