Preheat the oven to 180 °C. Grease a 23 x 13 cm baking tray for bread with coconut oil or cooking spray. In a large bowl, mix the mashed bananas, honey, melted coconut oil, eggs and BAM vanilla paste until all the ingredients are well combined.
In a separate bowl, mix together the wholemeal flour, baking soda, salt and cinnamon. Add the dry ingredients to the wet ingredients and stir until combined. If you are going to add walnuts, stir them into the batter now. Pour the batter into the prepared baking tray and smooth the top with a spatula.
Bake for 45 to 50 minutes, or until a toothpick inserted in the centre comes out clean and crumb-free. Let the bread cool in the baking tray for 10 minutes, then transfer to a wire rack to cool completely.
