Healthy strawberry muffins with chia seeds

1. Step

Preheat the oven to 180°C. Prepare the muffin tins and line them with paper baskets or grease them with a little oil.

2. Step

In a large bowl, mix together the wholemeal flour, baking powder, baking soda, salt and chia seeds.

3. Step

In another bowl, mix together the coconut oil, maple syrup, mashed banana, apple juice, and BAM Bourbon vanilla paste.

4. Step

Pour the wet ingredients into the dry ingredients and mix gently until all the ingredients are combined. Be careful not to over-mix, so that the muffins do not become tough.

5. Step Finally, stir in the BAM strawberry topping.
6. Step

Then fill the prepared muffin tins to about ¾ of the height.

7. Step

Bake the muffins in the preheated oven for about 18-20 minutes or until golden brown. You can test with a toothpick: it must remain dry when inserted into the muffins and pulled out.

8. Step

Once baked, remove them from the oven and leave them to cool a little in the moulds, then transfer them to a wire rack to cool completely.
