But the main ingredients of a real chocolate mousse - chocolate, eggs and sugar - are rarely changed in the recipe. The sweet cream version is also very popular. A drop of rum or fruit-flavoured liqueur adds a particularly nice touch.

Quality is even more essential when it comes to chocolate, so it's best to use one with at least 70% cocoa, which will ensure a really rich dessert flavour.
  • the eggs should be fresh and at room temperature - the chocolate mousse will go smoothly if you take the eggs out of the fridge at least 30 minutes beforehand. Cold eggs can harden the melted chocolate and change the texture of the chocolate mousse.
  • choose a heavy cream with the highest percentage of milk fat possible - this will keep the chocolate mousse in a more stable form even after a longer time.

Melt the chocolate in a water bath by placing a smaller bowl in a larger saucepan filled with water. Put the chocolate in the smaller bowl. Heat the water over a medium heat until the chocolate is melted into a smooth mixture. Then remove the saucepan from the heat and cool the chocolate.

Separate the yolks from the whites. In a separate bowl, whisk the egg whites with the sugar and add the cocoa and rum. Stir gently to combine. Then, in another bowl, whisk the egg whites until stiff and creamy.

In a third bowl, whip the sweet cream until stiff.

Gradually add the melted chocolate and whipped cream to the bowl with the whisked egg yolks. Mix well with an electric mixer, then gently fold in the egg whites.

Carefully fill the chocolate mousse into small glasses and refrigerate for at least 4 hours, or until the mousse has set.
