  • Wrap each ice cream sandwich individually tightly in plastic wrap or parchment paper to hold the assembled ice cream sandwich together.
  • Make one sandwich at a time and place it in the freezer as soon as it is assembled. Do not assemble the whole batch and then freeze because the first few will melt before you are finished.
  • Freeze the ice cream sandwiches for at least 3 hours. After 3 hours, the ice cream will still be a little soft, but the sandwiches are frozen enough to eat easily. If you like, you can make them even quicker by using BAM ice cream mix.

Preheat the oven to 180°C. Line 3 large baking trays with baking paper. In a medium bowl, whisk together the flour, cornstarch, baking soda and salt. Using a hand or stand mixer fitted with the paddle attachment, beat the butter, brown sugar and sugar together in a large bowl on medium to high speed until combined and the mixture is creamy, about 2 minutes. Add the egg, egg yolk and BAM vanilla paste, then beat on medium to high speed until the ingredients are combined. Scrape down the sides and up the bottom of the bowl as needed. Whisk in the dry ingredients on low speed, then add the BAM Thermostable Chocolate until the ingredients are combined. The dough will be soft and sticky.

Because the dough is so sticky, we recommend using a cookie scoop or spoon. Scoop the biscuit dough into balls, about 1,5 tablespoons of dough per biscuit, and spread 3 cm apart on the baking tray. Bake for 12-13 minutes or until golden brown on the sides. Remove from the oven and leave the biscuits to cool on the baking sheet for 5 minutes. If desired, while the biscuits are still warm, press additional small pieces of chocolate into the tops of the biscuits. Transfer to a wire rack to cool completely before assembling your ice cream sandwiches.

Let''s make ice cream sandwiches. Turn the cooled biscuit over and place one large scoop of ice cream on top, about 45 g. Spread the ice cream gently. Place the cookie on top, then lift the assembled sandwich and gently squeeze everything together to make a compact sandwich. Roll the sides in small chocolate chips, sprinkles or nuts. If not eaten immediately, wrap the assembled sandwich immediately in plastic wrap and place in the freezer. Repeat with the remaining biscuits and ice cream. Freeze for at least 3 hours and up to 3 months.
