There are two ways to melt the chocolate for the chocolate drops - in a water bath or in the microwave. In either case, break the chocolate into small pieces first, as this will make it easier to melt. Since baking chocolate, unlike most other types of chocolate, does not contain milk, but only pure cocoa, it is also suitable for vegans. Shake the chocolate chunks in a glass or microwave-safe bowl, add the maple syrup and cocoa butter. The latter will make the chocolate drops taste richer and creamier. You can also make them without the butter, but they will be slightly more bitter. If you choose the first way to melt the chocolate, fill the larger glass with water and place the smaller glass in the bottom glass so that it does not touch the water. Heat the water over a medium heat and in the smaller one, stir the ingredients slowly and gently with a spatula until the chocolate is completely melted. You can also melt the chocolate in the microwave, but you won''t have as much control over melting the chocolate as you would on the stove. This is because you may overheat the chocolate or even make it too sweet. If you do happen to overheat the chocolate, transfer it to a cold bowl (if possible, place it in the freezer briefly beforehand), add a few pieces of unused chocolate and stir gently for a while.
