Whether you're looking for a simple breakfast, brunch, or dinner idea, pancakes are always a great choice. Made with ingredients we already have at home, they are the perfect sweet meal to warm us up and give us a feeling of sweet indulgence. This time, we're going to bake the pancakes in smaller shapes, which will make for an even more appetizing meal.
Instead of sugar, we'll use BAM natural sweetener, a calorie-free, great alternative to sugar. Made from stevia and erythritol, this natural sweetener is ideal for those who want to indulge in sweetness while pursuing healthy goals.
Of course, there has to be a sauce to go with the pancakes, and the best one is chocolate. To make our sweetening really carefree, we serve BAM hazelnut spread with cocoa and no added sugar alongside our mini pancakes.
BAM hazelnut spread with cocoa and no added sugar contains more than 55% of the finest roasted hazelnuts from Piedmont, which give it an authentic and rich flavor and a creamy, spreadable texture. It combines the power of erythritol and stevia, natural sweeteners that provide a sweet taste without added calories. This means we can enjoy the sweet taste without the extra calories - great, right?
Let's enjoy delicious, carefree pancakes and indulge in simple pleasures without guilt.
In a large bowl, whisk together the flour, BAM natural sweetener, baking powder and salt.
In another bowl, whisk together the milk, egg, melted butter and vanilla paste.
Slowly pour the wet ingredients into the dry ingredients and stir until smooth and lump-free.
Heat a frying pan over a medium heat and lightly grease it with BAM coconut oil.
Using a ladle, form small circles of dough on the pan. The batter will spread slightly, creating really cute mini pancakes. Bake until bubbles start to appear on the surface (after about 2 minutes), then flip the pancakes and bake for another 1-2 minutes on the other side.
For a light sweet treat, serve the pancakes with BAM hazelnut spread with cocoa and no added sugar.
