- Use a spatula or the back of a spoon to evenly layer the mousse and cream for a smooth distribution.

- Monoportion cakes can be made the day before and refrigerated until serving

- If you want to add more freshness, you can add fresh pistachios or berries on top of the cream

- When working with chocolate, make sure that no water gets into the chocolate, as this can cause the chocolate to ''curdle''.

Monoportion cake with pistachio

Ingredients:

  • Chopped pistachios
  • 4 monoportion rings or silicone cake moulds

Instructions:

1. Step Melt the chocolate over a steam bath or in the microwave on low heat, taking care not to overheat it. Soak the gelatine in cold water for 5-10 minutes to swell.
2. Step Meanwhile, whip 1,5 dl sweet cream. Strain the gelatine and dissolve in 0,5 dl of hot cream or water.
3. Step Stir the melted gelatine into the melted chocolate, then carefully fold in the whipped cream. Divide the chocolate mousse between the moulds and place in the fridge to set.
1. Step Mix the pistachio spread well. Whisk the sweet cream with the icing sugar.
2. Step Soak the gelatine, strain and dissolve as for mousse. Stir the gelatine into the pistachio spread, then carefully fold in the whipped cream.
3. Step Gently pour the pistachio cream on top of the already set chocolate mousse and put back in the fridge to set.
1. Step Once both have set, gently remove the rings or silicone moulds. Decorate the cakes with chopped pistachios and serve.
