The muffins with vanilla filling are made with a very simple dough that can be done without a mixer. Vanilla is the main ingredient in the recipe and we added it in four different forms: Bourbon vanilla bean, vanilla paste, vanilla yogurt and vanilla almond milk. Don't worry, the only two really important ingredients are vanilla paste and bourbon vanilla bean. If desired, regular yogurt and milk can be used.
The muffins with vanilla filling are sweetened with sugar, the muffin batter will be moist and the color will be flawless white thanks to the two egg whites. The yogurt we use is a fat-free Greek yogurt with vanilla flavor.
Vanilla paste and pure bourbon vanilla beans are added to the dough. The easiest way to extract the seeds of the bourbon vanilla bean is to cut the pod in half and use a knife to scrape out all the black seeds, which have an intense vanilla flavor. Pour the filling into the muffins. Of course, the vanilla is the main ingredient here too. The vanilla gives the filling an authentic and very vanilla flavor. Nothing more and nothing less. If you like vanilla, you'll love it. If you love chocolate, you'll still love it. In fact, you'll definitely love the vanilla in the filling.
BAM tip: You can tell if the muffins are baked all the way by performing the "toothpick test". If you stick a toothpick in the center of a muffin and it comes out clean, the muffins are done. Of course, the test is well-known and it works. But there's another, more convenient way. Take the muffins out of the oven or leave them in, whichever you prefer. Gently press onto the muffin. If the muffin regains its original shape after you press it, it's done. If your finger made a dent, you'll need to bake the muffins a little longer. Easy right?
