Ingredients:

  • 150 g graham cracker crumbs (or other biscuits of your choice)
  • 50 g sugar
  • 900 g cream cheese, room temperature
  • 200 g sugar
  • 1 teaspoon BAM Vanilla paste
  • 4 large eggs, room temperature (approx. 220 g)
  • 160 ml sour cream
  • 160 ml sweet cream (whipping cream)

Instructions:

1. Step Preheat the oven to 180°C. Mix the crumbs, sugar and butter, spread over the base of the baking tray, bake for 10 minutes and cool.
2. Step Filling: Whisk cream cheese and sugar, add vanilla and eggs one by one, then sour cream and heavy cream. Pour over the base and bake at a reduced temperature of 160°C for about 1 hour and 10 minutes. Leave in the oven for another 1 hour.
3. Step Topping: mix sour cream, sugar and vanilla extract, spread on cooled cheesecake and chill for at least 4 hours or overnight.
4. Step Serving: remove from the baking tray and serve, adding fresh fruit if desired.
