We''ll makea no-bake cheesecake with Oreo cookies using familiar and simple ingredients. The result will be a fluffy, creamy, Oreo cookie-filled cheesecake. We will use Oreo cookies for the cookie base of the cheesecake dessert. If you really like the taste, we suggest you use the biscuits for the cream as well, not just for the biscuit base.

If you are afraid that the cheesecake base will not be firm enough, you can bake it in the oven at 180°C for about 10 minutes before filling it with the cream. We have never done this ourselves, as the cookie base is still firm and solid with Oreo cookies without baking. All you need to do is firm it up well with a fork against the baking tray before filling it.

For the cream filling we will use cream cheese. We suggest softening the cream cheese to room temperature before using, as this will make the cheesecake cream smoother. Don''t forget the icing sugar as well, as using this will ensure a fluffy result.

Ingredients:

  • 24 Oreo biscuits
  • 60 g unsalted butter
  • 500 g room temperature cream cheese
  • 120 g powdered sugar
  • 1 teaspoon BAM vanilla paste
  • 480 ml sweet whipping cream (well chilled)
  • 15 chopped Oreo biscuits

Instructions:

Crush the Oreo cookies into fine crumbs. In a bowl, mix the crumbs and melted butter. Stir until the crumbs are well moistened. Line a 22 cm diameter baking tray with baking paper. Press the crumb and butter mixture firmly with a fork against the base of the baking tray, pressing it firmly into an even layer. Let the cookie base cool in the fridge while you prepare the cheesecake filling.

Whisk the cream cheese in a bowl until smooth. Add the icing sugar and BAM vanilla paste and mix well again. Pour the well-chilled whipping cream into a separate bowl. Start mixing at low speed, then increase the whisking speed to medium-high until the cream thickens and stiff peaks form. Add the whipped cream to the cream cheese mixture and mix gently. Then add the chopped Oreo cookies.

Take the baking tray with the cooled biscuit base out of the fridge. Spread the prepared cheesecake filling evenly on the cookie base. Cover the cheesecake tightly and refrigerate for at least 4 or 5 hours. When the cheesecake is chilled, remove the ring and serve.
