Ingredients:
- 300 g sweet potatoes
- 25 g plain flour
- 2 eggs
- 1/2 bag of baking powder
- a pinch of salt
- 45 g BAM black cocoa powder
- 75 g maple syrup (optional)
- 70 g natural peanut butter
- 50 g melted butter
- 90 g BAM dark chocolate
- 1 teaspoon BAM vanilla paste
Instructions:
1
Wash, peel and cut the sweet potatoes into small cubes. Cook the potatoes in boiling water until tender. Then drain and mash to make a puree.
2
Melt the butter in a small bowl and then add the BAM dark chocolate. Stir until the chocolate is completely melted and the mixture is smooth. Remove from the stove and allow to cool to room temperature.
3
In a large bowl, combine the sweet potato, maple syrup, eggs and BAM vanilla paste. Stir until smooth.
4
In another bowl, sift together the flour, BAM black cocoa powder, baking powder and salt. Then gradually add the dry ingredients to the wet sweet potato mixture, stirring all the time.
5
Pour the prepared mixture into a baking tray lined with baking paper and spread it evenly. Preheat the oven to 180°C. Bake the brownies for about 25-30 minutes, or until a toothpick inserted in the centre comes out clean.
6
Once the brownies are baked, leave them to cool in the baking tray, then cut them into squares.
