Panna cotta means "cooked cream" in Italian .

The preparation of panna cotta itself involves very few ingredients and is essentially a simple mixture of cream, sugar and vanilla. Gelatine is added to the cream, sugar and vanilla mixture and the mixture hardens to create the creamy consistency of panna cotta. The final product will be a rich and silky smooth panna cotta, which can also be served in a glass.

Pour the water into a small bowl and sprinkle the gelatine over it. Make sure to distribute the powder evenly, otherwise the crystals will not dissolve properly. Leave to stand for 5 to 10 minutes to soften.

Meanwhile, heat the sweet cream, sugar, BAM vanilla pod and grated vanilla seeds in a medium saucepan over a medium heat. Bring to the boil and simmer until the sugar has dissolved. Remove from the heat and discard the vanilla pod. Stir in the gelatine and whisk immediately to dissolve the gelatine. If the gelatine has not completely dissolved, return the pan to the stove and heat gently over a low heat. Stir constantly and do not let the mixture come to the boil.

Pour the cream into 4 individual serving dishes. Refrigerate for at least 2 to 4 hours, or until the panna cotta is completely set. Top with fresh fruit, strawberries, BAM toppings or BAM spreads, if desired. The panna cotta can keep, covered and refrigerated, for up to three days.
