
Ingredients:
- 4 ripe pears
- 750 ml BAM Red Chocolate Wine
- 200 g sugar
- 1 cinnamon stick
- 4 cloves
- zest of one lemon
- 1 teaspoon BAM vanilla paste
- whipping cream

Preparing the pears: Peel the pears, leaving the stems and removing the bottoms so that they remain upright, cut lengthwise to remove the core and seeds, so that it is hollow in the middle.

To make the wine: In a large pot, combine the BAM Red Chocolate Wine, sugar, cinnamon, cloves, lemon zest and BAM Vanilla Paste. Bring the mixture to the boil and then reduce the heat and simmer gently for about 10 minutes to allow the flavours to blend well.

Cooking the pears: gently place the pears in the hot wine. Cover and cook on a low heat for about 20-30 minutes, basting occasionally with wine, until the pears are soft but still hold their shape. When the pears are cooked, remove them from the wine and place them on a plate.

Final preparation: strain the wine in a pot through a colander to remove the spices and the zest of the lemon. Simmer the mixture until it reduces and a thick syrup is formed. Pour the sauce over the pears. Allow to cool slightly, then serve with the cream.
