shiny chocolate icing or mirror cake icing

The preparation of shiny chocolate icing, also known as mirror icing, is an art that can turn any cake into a true culinary masterpiece. This technique allows you to create a beautiful, shiny surface that not only looks stunning, but also gives the cake a sophisticated finishing touch.

Mirror icing is popular with pastry chefs around the world for its ability to create a smooth and reflective topping that can incorporate a variety of colour effects, adding a unique and elegant look to the cake.

Although it may seem complicated to prepare, making mirror icing is achievable even for home confectioners, as long as they follow the correct procedure and use quality ingredients.

TIPS:

  • Before frosting, brush the sponge cake with buttercream or ganache. The cake should be flat and well chilled (ideally at least 2 hours in the freezer, even better overnight).
  • If you don't have food colouring, you can also use BAM chocolates to achieve a similar effect. I recommend BAM Strawberry, Ruby or Orange chocolate for a beautiful colour element.

With the right preparation and a little patience, you too can create a beautiful cake that will enchant your guests. Get ready to delve into the world of confectionery art and create your own shimmering mirror frosting.

  • Preparation time: 30 min

  • Number of ingredients: 6

Ingredients:

Instructions:

1. Step

Mix the condensed milk, sugar and 70 ml of water in a bowl. Heat to boiling, stirring constantly to prevent burning.

2. Step

Mix the gelatine with the rest of the water and leave to swell.

3. Step

Add the swollen gelatine to the milk mixture and stir until the gelatine is completely dissolved.

Add BAM white chocolate to the milk mixture and stir until melted.

4. Step

Using a stick mixer on low speed, mix the icing once more to reduce air bubbles and obtain a creamy and perfectly smooth icing.

5. Step

If you want to have a coloured topping, you can add the food colouring in this step.

6. Step

Allow the icing to cool slightly as if the icing is too hot it may melt the buttercream of the cake.

7. Step

Place the cake on a cooling rack and keep flipping until it is completely covered.

8. Step

Carefully lift the cake, remove the excess icing and place it on a serving mat. If desired, you can decorate the cake further.
