  • Use flavouring ingredients. Blueberry pie filling doesn''t need a lot of ingredients, but it still tastes amazing. Blueberries are already quite sweet on their own, so you only need to add a little sugar. Don''t forget the lemon zest and the juice of a fresh lemon. Adding a hint of cinnamon gives the blueberry pie a subtle touch that really brings out the natural flavour of the blueberries.
  • We use 2 ingredients to thicken it: we use a mixture of cornstarch and flour. If the pie is baked long enough, the blueberry jam filling sets and thickens nicely.

Ingredients:

  • crumbly dough
  • 900 g fresh blueberries
  • 135 g sugar
  • 30 g flour
  • 14 g cornstarch
  • 30 ml lemon juice
  • a pinch of cinnamon
  • 1 teaspoon lemon zest
  • 15 g cold unsalted butter
  • 1 egg
  • 15 ml of milk
  • sugar

Instructions:

Prepare the shortcrust pastry as directed for the apple pie. Then prepare the blueberry filling: in a large bowl, mix together the blueberries, sugar, flour, cornstarch, cinnamon, lemon juice and lemon zest. Stir until the mixture is completely dry and powdery. Crumble in a few blueberries if necessary or add a little BAM topping to moisten the mixture. Remove the filling when the oven has warmed up. If necessary, the filling can be covered and chilled for up to 24 hours. Preheat the oven to 220°C. Place the baking tray on the lower rack of the oven to catch the blueberry juice.

Roll out the short pastry according to the instructions for the apple pie and add the blueberry filling. Add the top crust on top of the blueberry filling and bake the blueberry pie in the oven for 25 minutes. Then reduce the oven temperature to 190°C. The pie is then baked for another 40 to 50 minutes. Remove the pie from the oven, place on a cooling rack and cool for at least 4 hours before slicing and serving.
