These classic biscuits are crispy around the edges and soft and chewy in the centre. They are slightly sweet and warmly spiced with cinnamon and have a delicate spicy flavour that you won''t be able to resist.


As well as the taste, it will also impress you with its ease of preparation. It will only take 30 minutes from kneading the biscuits to baking them. Usually, biscuit recipes also require the dough to be chilled, which can be a time-consuming challenge. Snickerdoodle cookies are made without chilling the dough.

Make sure to bake only one batch of biscuits at a time. Even though you have set one temperature in the oven, the actual temperature in the oven may vary. If you have several baking trays in the oven, the biscuits on the low rack may be golden brown before the timer goes off, while the biscuits on the high rack will need a few more minutes. For the most consistent results, we recommend baking one batch of biscuits on the middle rack.

Do not overbake the biscuits. It is best to take the biscuits out of the oven when they still look almost underdone. When you take them out of the oven, the biscuits will still be nicely set. If they are baked longer, they will not keep their chewy centre.

Let the biscuits cool on the baking sheet.

Ingredients:

  • 250 g sugar
  • 2 teaspoons cinnamon
  • 225 g room temperature butter
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1 teaspoon BAM vanilla paste
  • ½ teaspoon sea salt
  • 270 g flour

Instructions:

Preheat the oven to 180°C and line two large baking trays with baking paper. In a shallow bowl, mix 3 tablespoons of sugar and the cinnamon. In the bowl of a stand mixer, beat the butter and the remaining sugar until the mixture is light and fluffy. Add the egg and egg yolk and beat until creamy. Add the cream of tartar, baking soda, vanilla paste and salt and mix until the ingredients are combined. Gradually add the flour and stir until the mixture is uniform.

Scoop the dough with a spoon or a cookie scoop, then roll it into balls with your hands. Roll the balls in cinnamon sugar and arrange them on the prepared baking trays, leaving at least 2 cm between the balls.

Bake the biscuits one batch at a time. Bake the biscuits for 8 to 9 minutes or until the biscuits are puffed. They will look underdone, but if you take them out, they will remain soft and chewy in the middle. Leave to cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
