Preheat the oven to 180°C and prepare a baking tray lined with baking paper.
In a large bowl, beat the butter and icing sugar with a mixer until the mixture is light and fluffy.
Add the egg, vanilla paste and grated lemon zest and continue whisking until all the ingredients are well combined.
In another bowl, mix together the flour, coconut flour and baking powder. Gradually add the dry ingredients to the butter mixture and mix until you have a uniform dough.
Scoop small amounts of dough with a spoon and form into balls. Place them on the prepared baking tray, leaving a little space between them to allow them to spread during baking.
Bake the biscuits in the preheated oven for about 12-15 minutes or until the edges are lightly browned. Be careful not to overbake the biscuits, as they should remain soft.
Leave the biscuits on the baking tray to cool slightly, then transfer them to a wire rack to cool completely.
