With its extremely juicy texture, buttery banana and brown sugar flavour, incredibly soft crumbs, this is undoubtedly a favourite banana bread recipe . You need 4 ripe bananas.

And, why is this banana bread recipe the best? The answer is four large bananas. More bananas add more moisture and flavour to the final product. Did you know that you can use an electric mixer to "mash" the bananas? Cut the bananas into large pieces and place them in the bowl of a stand mixer - or use a regular mixing bowl and a hand mixer. Start whizzing on low speed, then gradually increase the speed to medium-high as the bananas break down into a banana puree.

A cream cheese frosting can be added to the banana bread. To prepare, beat 112 g softened cream cheese and 60 g softened unsalted butter on medium speed until the mixture is smooth. Add 120 g of icing sugar , 1/2 teaspoon of BAM vanilla paste and a pinch of salt and mix until the ingredients are combined. Pour the prepared glaze over the banana bread.

Ingredients:

  • 250 g all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 115 g unsalted butter at room temperature
  • 150 g brown sugar
  • 2 large eggs at room temperature
  • 80 g plain yoghurt or sour cream at room temperature
  • about 4 large ripe bananas
  • 1 teaspoon BAM vanilla paste

Instructions:

Preheat the oven to 180°C. Grease a 23 x 13 x 8 cm loaf tin with butter.

In a large bowl, whisk together the flour, baking soda, salt and cinnamon.

Using a hand or stand mixer fitted with a whisk or beater attachment, beat the butter and brown sugar at high speed until smooth and creamy, about 2 minutes. On medium speed, add the eggs one at a time, beating well after each addition. On medium speed, whisk in the yogurt, mashed bananas and BAM vanilla paste until just combined. With the mixer running on low speed, slowly whisk the dry ingredients into the wet ingredients until the mixture is lump-free.

Pour the mixture into the prepared baking tray and bake for 60-65 minutes. After 30 minutes, cover the bread loosely with aluminium foil to prevent the top and sides from browning. Remove from the oven and allow the bread to cool completely in the baking tray placed on a wire rack.
