Whisk the egg whites into the snow. Gradually add the sugar and mix for another 5 min.

Add the vinegar, starch, vanilla paste, pink colouring and mix lightly with a spatula. Spoon the mixture onto the tray.

Preheat the oven to 160 degrees, place the tray in the oven and reduce the temperature to 120 degrees. After 30 min, reduce the temperature to 100 degrees. Bake until the pavlovas are dry to the touch.

When the pavlovas are baked, turn off the oven and open the door halfway to allow the pavlovas to cool slowly.

Whip the cream. Spread the strawberry jam and whipped cream on the cooled pavlovas. Top with a piece of fresh strawberry and garnish with dried rose petals.
