In a large bowl, mix together the flour, baking powder and a pinch of salt. Add the butter and mix with your hands or a food processor until the mixture is crumbly and crumb-like. Then add the icing sugar, egg and BAM vanilla paste and knead until the dough is smooth and uniform. If necessary, add a little more flour.
Wrap the dough in plastic wrap and place it in the fridge for at least 30 minutes to firm up.
Preheat the oven to 180 °C. On a lightly floured surface, roll out the dough to a thickness of about 3 mm. Using a knife or rolling pin, cut out triangles (approximately 8x8 cm). Spread a teaspoon of BAM apricot jam in the centre of each triangle.
Carefully wrap the dough around the jam to form croissants. Place them on a baking tray lined with baking paper. Bake for 12-15 minutes or until golden brown.
Serve the croissants while still warm.
