Coconut cake with chocolate (recipe)
Ingredients:
- 200 grams of butter + to coat the baking tray
- 150 grams chopped dark chocolate with at least 60 % cocoa
- 155 grams of white flour
- 2 teaspoons baking powder
- 2 tablespoons cocoa powder
- pinch of salt
- 100 grams grated coconut
- 4 large eggs (whites and yolks separated)
- 200 grams of powdered sugar
- 200 millilitres sweet cream
For the glaze:
PREPARATION
- Preheat the oven to 175 °C and grease a round baking tray (about 25 cm in diameter) with butter.
- Melt the chocolate and butter over the heat. Leave to cool a little. Sift the flour into a separate bowl and add the baking powder, cocoa and salt, and finally the grated coconut. Mix well.
- Whisk the egg yolks and sugar with a mixer until fluffy. Add the melted chocolate mixture and mix to combine. Then add all together to the pre-prepared flour mixture and the other dry ingredients.
- In a clean bowl, whisk the egg whites until fluffy. Then gently fold it into the dough mixture, which is then poured into the prepared baking tray and baked for about 50 minutes. You can also use a toothpick to check that the dough is baked. Then leave the sponge to cool.
- For the glaze, melt the chocolate over steam. Remove and stir in the butter. Allow the mixture to cool slightly, then spread the glaze over the sponge cake. Sprinkle the cake with shredded coconut and leave to rest before serving.
