But how do you make apple strudel with cottage cheese?

The key to making a great apple strudel with cottage cheese is to choose high-quality ingredients. Next, we move on to the preparation of the dough. The dough is made from flour, eggs and milk. Using these ingredients will ensure that the dough is light, which is essential for the overall texture and taste of the apple strudel. If you are making the dough yourself, rather than using the shop version, make sure that it has rested at room temperature for a few hours. This will ensure that the gluten in the dough develops well and will also make the dough more pliable and obedient.

The apples used to make the filling should be fresh and crisp, and the curd should be smooth and creamy.

For an even better flavour, we will also use BAM vanilla paste. The paste will ensure that the ingredients really combine well, thus further enriching the flavour of the apple and cottage cheese strudel. To further enrich the flavour, we will also use the Strudel & Pie spice mix. Sprinkle the Strudel & Pie spice mix over the dough before wrapping it.

Ingredients:

For the apple strudel with cottage cheese:

  • 1 packet of puff pastry
  • 4 large Granny Smith apples
  • 200 g sugar
  • 1 teaspoon ground cinnamon
  • 40 g raisins (optional)
  • 225 g of curd
  • 1 beaten egg
  • 2 tablespoons breadcrumbs
  • 1 teaspoon BAM vanilla paste

Instructions:

For the apple strudel:

Preheat the oven to 200°C. Line a baking tray with baking paper.

In a large bowl, mix together the apples, sugar, BAM vanilla paste, imet and raisins (if using). Mix until the apples are evenly coated with the other ingredients. Since we used the store-bought version of the dough, stretch it out and prepare the apple filling.

Spread the cottage cheese evenly over the pastry, leaving a 1 cm wide border around the edges. Top the cottage cheese with the apple mixture, again leaving a 1 cm wide border around the edges. If you decide to add the spice mixture for the strudel and pie, sprinkle it on the mixture before rolling the dough. Be careful when adding the spices, as the mixture itself has a really rich flavour. The dough is then carefully rolled from one of the longer sides to form a log shape.

Place the strudel on the prepared baking tray, seam side down. Brush the top with beaten egg and sprinkle with breadcrumbs. Bake for 35 to 40 minutes or until the strudel is golden brown.

Allow the apple strudel to cool for at least 10 minutes before slicing and serving. Serve with whipped cream or vanilla ice cream, if desired.
