- 100 g soft white flour
- 100 g cold butter, cut into pieces

Grind the almonds with the icing sugar to make a fine powder.

Sift the flour and salt into a bowl. Add the ground almonds with the sugar and the cold sliced butter. Knead the ingredients with your hands to form a smooth dough. Be careful not to knead too long to keep the dough cold.

Form the dough into small balls, about the size of a cherry. Place them on a baking tray lined with baking paper.
