Did you know that coconut cubes come from Australia?

Coconut cubes are an Australian type of dessert in the form of small cubes coated with chocolate and rolled in coconut flour. In Australia, they are called Lamington, named after Lord Lamington, who was Governor of Queensland at the turn of the 19th century. However, some sources claim that the cubes are named after his wife, and sources are not unanimous as to the master who came up with the delicious recipe for the cubes.

The inventor is most often cited as Lord Lamington''s chef, Armand Galland, who is said to have come up with the recipe in a time crunch when he had to serve Lamington''s unannounced guests. Lacking time to buy all the ingredients needed to make the dessert, he used leftover vanilla cake from the previous day. He dipped the cake pieces in melted chocolate and rolled them in coconut. The guests were more than impressed by the dish, as coconut was unknown in Europe at that time and Galland had been introduced to it by his wife, who was from Tahiti, an island where coconut was an integral part of the local cuisine.

A simple recipe for coconut cubes

Coconut cubes are popular all over the world. After Australia, they soon conquered New Zealand, the United States and Africa, but in Europe they are most popular in Slovenia, Croatia, Hungary, Serbia, Bosnia and Herzegovina and Romania. In Australia, there is even a day dedicated to them every year on 21 July, when they are prepared and sold for charity all over the country.   • 2 cups all-purpose flour
  • ½ cup butter, warmed to room temperature
  • ¾ cup crystal sugar
  • ½ cup milk
  • 2 eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla sugar
  • pinch of salt

  • ½ cup milk
  • 3 teaspoons margarine
  • 2 cups powdered sugar
  • 1/3 cup cocoa powder
  • 2 cups coconut flour
  • a dash of rum (optional)

Instructions:

preparation of the dough:

In a large bowl, whisk together the flour, baking powder and salt.

In a small bowl, beat the butter with an electric mixer until completely soft. Then add the sugar and mix until the mixture is light and fluffy. Then add the eggs one by one and beat well again with an electric mixer. Add the vanilla sugar to the mixture and then gently fold in the milk with a spatula.

Spread the spatula dough evenly on the baking tray, which you have previously protected with baking paper. Bake at 180 °C for about 25-30 minutes, or until the dough is cooked through. You can check this by sticking a fork into the dough and if there are bits of dough on the fork, the dough is not yet baked. If the fork is completely dry, the dough is baked. Then remove the dough from the oven and allow it to cool slightly for about 10 minutes.

When the dough is completely chilled, cut it into 16 cubes and wrap each cube in transparent cling film. Place the cubes in the fridge for at least 2 hours.

preparation of the dressing:

Heat the milk, margarine, sugar and cocoa powder in a saucepan and cook until all the ingredients are combined. Stir gently all the time while cooking.

Once the dressing has cooled a little, you can add a little more rum and stir well again.

Sprinkle the coconut on a plate or work surface. Dip the cut cubes first in the chocolate and then roll them in the coconut.

Allow the coconut cubes to cool before serving them to the company of your choice.
