Coconut cubes are an Australian type of dessert in the form of small cubes coated with chocolate and rolled in coconut flour. In Australia, they are called Lamington, named after Lord Lamington, who was Governor of Queensland at the turn of the 19th century. However, some sources claim that the cubes are named after his wife, and sources are not unanimous as to the master who came up with the delicious recipe for the cubes.
The inventor is most often cited as Lord Lamington''s chef, Armand Galland, who is said to have come up with the recipe in a time crunch when he had to serve Lamington''s unannounced guests. Lacking time to buy all the ingredients needed to make the dessert, he used leftover vanilla cake from the previous day. He dipped the cake pieces in melted chocolate and rolled them in coconut. The guests were more than impressed by the dish, as coconut was unknown in Europe at that time and Galland had been introduced to it by his wife, who was from Tahiti, an island where coconut was an integral part of the local cuisine.

After Australia, they soon conquered New Zealand, the United States and Africa, but in Europe they are most popular in Slovenia, Croatia, Hungary, Serbia, Bosnia and Herzegovina and Romania.
