Cottage cheese pancakes are a dish in which pancakes play the starring role. The pancakes are then topped with a cottage cheese filling, and a little lemon zest is added for a little extra freshness. Raisin lovers can also add raisins to the filling.


The base for the dish is pancakes. A pancake is a dish made up of basic ingredients such as flour, eggs and milk. Add a little salt, heat up a frying pan and that''s it. But anyone who has ever made pancakes knows that this is not the case. It can get stuck in the preparation of the pancake batter itself, which can be too thick or, conversely, too runny. This is the first time you think you might need pancake recipe.


Cottage cheese pancakes can be served for breakfast, dinner or as a dessert at lunch. If you don''t like the cottage cheese in the recipe, you can replace it with ricotta or spread it with your favourite jam.

Ingredients:

  • 250 g flour
  • 2 eggs
  • 240 ml of milk
  • 350 ml mineral water
  • a pinch of salt
  • 420 g sour cream
  • 1 egg
  • 2 tablespoons sugar

Instructions:

Prepare the pancakes. Mix the eggs with the salt. Gradually add the flour, milk and mineral water. Mix until smooth. Let the mixture stand for 30 minutes before baking.

Heat a lightly oiled frying pan over a medium-high heat. Pour about 3 tablespoons of the batter into the pan and turn it to evenly cover the bottom of the pan. Cook each side until golden brown (about 2 minutes on each side).

Prepare the filling. Add the eggs and sweetener to a bowl and stir until a foam-like mixture is obtained. Add the cottage cheese, lemon zest and BAM vanilla paste.

Prepare the pancakes for baking. Add 2 tablespoons of cottage cheese filling to each pancake. Spread the filling in the middle and roll the pancake into a roll. Place them in the oiled baking tray in which they will be baked. Next, mix the sour cream with the egg and sugar in a bowl and pour over the pancakes. Bake the cottage cheese pancakes in a preheated oven at 180°C for about 25 minutes or until golden. Serve warm or cold.
