  • Do not overmix the pancake batter: unlike American pancakes, in this case we do not want fluffy pancakes. Too much air in the batter can create bubbles which will give your pancakes a strange texture. Stir the pancakes just long enough to make the batter homogeneous, then stop!

Grease a medium-sized pan generously with cooking spray and place over a medium heat to warm up.

While the pan is heating, prepare the pancake batter. Put the eggs, melted butter, milk, flour, sugar, vanilla paste and salt in a bowl and stir until homogeneous.

Scoop the dough with a ladle and pour it onto the heated pan.

Bake for about 30 seconds or until the pancake starts to bubble around the edges and turns from a shiny mass to a matt surface. Using a spatula, flip the pancake and cook the other side for about 30 seconds. Repeat with the remaining pancakes.

Whip the whipping cream until stiff peaks form.

Serve the pancakes by spreading half of the circle with a large dollop of whipped cream and a heaped tablespoon of BAM strawberry topping.
