We love a good roulade. A roulade is an impressive and delightful dessert. But getting a roulade with a perfect spiral can be tricky as it can easily crack or break. We''ve put together some tricks and tips to make your next roulade easier to prepare.

The roulade
is a dessert that many people believe is perfectly easy to make. We fill a baked sponge with our favourite flavours in a custard, roll it up, serve it and that''s it.

But a lot can go wrong when making a roulade. The sponge may crack during the rolling process. The filling you want to fill the roulade with can run down the baking tray during baking. It often happens that we spread the filling over the sponge and when we cut the roll open we find that it is not evenly spread, but that there is much more filling at one end than at the other.

We have therefore put together a few tricks and tips that can help you when you next make a roulade.

1. Let''s start with a good test.

A great roll will definitely be one that has a fluffy and airy dough. To get closer to this result, start by beating the eggs at high speed for at least five minutes until you have a foamy mixture. Then gradually and slowly beat in the sugar until the mixture is thick and slightly lemon-coloured. Only then add the dry ingredients such as flour, baking powder, salt, etc. Make sure to sift the flour, baking powder or baking soda through a sieve before adding the flour, baking powder or baking soda to ensure an airy texture. 2. Continue baking.

As we have already learned and remembered: a great roulade is sure to be one that has a fluffy and airy dough. If we have followed the tricks and tips above, we have exactly the dough that is now waiting to be baked. Grease and line the baking tray in which the roulade will be prepared with greased baking paper. Use the baking tray of the size indicated next to the recipe for the roulade.

Then spread the dough on the baking tray. Then simply transfer it to the preheated oven to bake.

Since we are, of course, talking about a roulade, after baking we come to the most important job: rolling. As soon as you take the roulade out of the oven, make sure you turn it out onto a clean kitchen cloth that has been lightly dusted with sugar. Slowly and carefully remove the baking paper. Then, start rolling so that the roll, wrapped in the kitchen towel, will cool completely.

4. Prepare the filling.

Remember: the recipe must be followed from start to finish, carefully following the steps and procedures, because this is the only way to make an enviable dessert.

Once the roulade dough has cooled completely, gently unwrap it. Then spread the chosen filling over the dough. Remember to leave about half an inch around all the edges. This prevents the filling from running out of the roulade during baking.

5. Roll again.

We are now ready to roll the dessert again. But, don''t worry. We''ve already rolled the roulade dough once to get it to roll exactly the way we want it. We start rolling the roulade at the same end as we did the first time. You can use the kitchen cloth again to help you. Continue rolling until you reach the very end. So, the hardest part is over.

6. Cool and serve.

That''s it, the roll is perfect. If you want to keep it that way, refrigerate it until ready to serve. If you made the roulade just before now, refrigerate it for 30 minutes each before serving. This will ensure that the filling really bonds with the dough and prevent the best part of the roulade - the filling - from leaking out when I cut it.

When you are ready to impress your guests, place the roulade on a serving plate and sprinkle it with icing sugar. If you want to take the flavours to the next confectionery level, serve the roulade with ice cream or homemade whipped cream.
