Almond croissants with BAM nougat chocolate are crispy on the outside and soft on the inside. The double baked method enhances the nutty almond filling, while BAM nougat chocolate melts into a rich, creamy center. ? Ingredients • 5–7 croissants, 1–3 days old • 45 g sliced almonds • powdered sugar for dusting • 80 g BAM nougat chocolate chips • 120 g water • 65 g sugar • 150 g almond flour • 150 g white sugar • 1.5 g salt • 170 g unsalted butter • 2 tsp BAM bourbon vanilla paste • 2 eggs • 2 tbsp heavy cream Preparation Heat the water and sugar to make a simple syrup and let it cool. Beat the almond flour, sugar, salt, butter, BAM vanilla paste, eggs, and cream into a light almond filling. Slice the croissants, brush with syrup, fill with almond cream and BAM nougat chocolate, then close them. Add more cream on top and sprinkle with sliced almonds. Bake until golden and crisp, let cool slightly, then dust with powdered sugar.
